Yogurt Oat cake with blueberries.

Enjoying a tasty piece of cake that is low in sugar and fat? It's possible!

Ingredients:


  • 2 eggs

  • 200 g vanilla yogurt (I used Greek vanilla yogurt)

  • 300 g Lean Greek yogurt.

  • 10 g (bourbon) vanilla sugar.

  • 1 half ampoule vanilla aroma.

  • 250 g Oat flour (finely ground oatmeal flakes)

  • 1.5 tsp baking powder.

  • 1 tsp coconut oil (melted)

  • 1 tsp biscuit spices (or cinnamon)

  • 125 g Blueberries.

  • (Optional) sweetener of your choice and tast (maple, agave, stevia, ..)

  • Pinch of salt

Directions:


  1. Preheat the over to 180 degrees.

  2. Mix the yogurts with the eggs and vanilla flavor.

  3. Mix the oat flour, baking powder, cookie spices, vanilla sugar and salt.

  4. Now bring both together, add the melted coconut oil and mix until smooth.

  5. Line a baking tin with baking paper and pour the batter into it.

  6. Now press the blueberries on top.

  7. Place in the oven for 40 min.

  8. gratin the cake on grill for another 2.5 min. (This will make the berries pop open).

  9. Allow to cool and store in a tightly closed box.




Would you rather have the cake a little sweeter? Spread a slice with a little bit of honey, agave or maple syrup.
