Protein breakfast cake

Start the day with dessert? Why not? Especially when it is rich in proteins and low in sugars! Add some fruit and voila, you have a tasty and healthy breakfast to start your day! And ofcourse these are perfect as a snack too! Make them fresh in the morning or in advance to save some time.





ingredients:

Per serving (per person):


  • 20 g oatmeal flakes.

  • 15 g vanilla protein powder.

  • 30 g (vegan) quark.

  • 1 egg

  • 50 g blueberries. (Or fruit of your choice).

  • 25 ml Milk of your choice. (I used unsweetened almond milk.)

  • 50 ml water

  • 1/2 tsp Baking powder

  • 1/2 tsp Speculaas, gingerbread or pumpking spices.

  • (Optional) Maple syrup.


You can leave out the protein powder if you want and replace it with extra oatmeal. (add 1/2 teaspoon vanilla extract or aroma and a pinch of salt for taste.)


Directions:


  1. Preheat the oven to 180 degrees.

  2. I weighed all the ingredients, except for the fruit, directly in a blender cup to save on dishes. (If you use almond milk, you can just weigh it, 1ml weighs 1g, the same for water, other milks may differ, so i suggest to measure it first).

  3. Just stir the ingredients together with a spoon and blend!

  4. Take an oven safe dish that is high enough, the batter should remain about 1 cm below the edge.

  5. Grease the oven dish.

  6. Place half of the fruit on the bottom of the dish.

  7. Pour over the batter.

  8. Finally add the remaining fruit.

  9. Place in the oven for 25 minutes.

  10. (Optional) pour some maple sirop over for some extra sweetness.
