Omelet with vegetables and smoked salmon.

Breakfast has to be one of my favorite meals! Surely it’s is in my top 3. 🤪

This breakfast is a really delicious dish to start your day, but it also fits perfectly for lunch.

Not a big fan of salmon? Leave it out or replace it with your favorite smoked meat or fish.



Ingredients:


  • 1 egg

  • 1 Dash of milk of choice.

  • 1 Handful of spinach leaf.

  • 2 mushrooms.

  • 1 Half tomato.

  • 1-2 Stalks of spring onion.

  • Spice mix (sea salt, chili, garlic, parsley.)

  • Pepper.

  • 1 Slice of smoked salmon.


Directions:


  1. Chop all the vegetables.

  2. Beat the egg in a bowl and add a splash of milk.

  3. Heat a pan with a little butter or oil by choice.

  4. Fry the mushrooms briefly.

  5. Add the spinach and put a lid over the pan. (1 minute)

  6. Stir the spinach and cover with the egg mixture.

  7. Sprinkle with the tomato cubes, season with spice mix and pepper and put the lid back over the omelet and put on a low heat.

  8. After 1 minute, remove the lid from the pan and carefully fold the omelette in half (first carefully go under the omelet with a spatula to see if it loosens nicely everywhere).

  9. Cut the smoked salmon into small slices and chop the spring onion.

  10. Sprinkle these over the omelet.

  11. Season even more if necessary.

  12. Delicious with toasted bread or just on its own.
