Omelette with a Thai twist.


I'm actually not such a big omelette lover or mostly not typical western omelets.

But compared to the Thai omelets.. my all time favorite since my childhood!

In Thailand they are eaten as a side dish with steamed rice.


The ingredients of the basic recipe:

  • Eggs

  • finely chopped garlic.

  • Cut in half shallot rings. (Or spring onion).

  • Splash of Asian fish sauce.

  • Grinded pepper.

  • (Optional coriander).

Directions:


  1. Beat the eggs with the fish sauce and pepper.

  2. Fry garlic with shallot.

  3. Add eggs

  4. Sprinkle with filling of your choice.

  5. Bake 1 side golden brown and fold double.


In this version i added an extra egg white here, fresh spinach and cottage cheese to add extra protein.
