This was the first time I tried this sweet version of the well-known Italian frittata, and i LOVE it! The word frittata roughly means "baked." This dish actually originated from poverty, where leftovers from the day before were used as ingredients combined with cheese, egg and lots of herbs. By replacing a number of typical ingredients, you can transform this dish into a tasty and responsible sweet breakfast.
Ingredients:
2 small portions:
2 eggs
100 g Cottage Cheese
1/2 grated apple
100 g pitted cherries (frozen)
1 tsp honey
1 tsp additional sweetener of your choice.
1 tbsp almond flakes
Pinch of salt
Pinch of ground cinnamon.
Directions:
Preheat the oven to 175 ° C
Beat the eggs, add all other ingredients together, except for the cherries and almond shavings.
Mix everything well togheter.
Divide the batter over 2 oven dishes and divide the cherries.
Garnish with almonds and place in the preheated oven at 175 ° C for 18 minutes
