Bulgur salad with vegetables.

This salad can be perfectly made as a base, where you can add fish, meat (substitute) or cheese if you desire.

Also delicious as a side dish, with barbecue for example.


Per person (if it’s a main course):

  • 100 g zucchini

  • 50 g mushrooms

  • 75 g of tomato

  • 25 g of spinach

  • 75 g of cucumber.

  • 1 clove of garlic.

  • 1/2 shallot

  • 1/2 Sprig of spring onion.

  • 1 Sprig of fresh basil.

  • Olive oil

  • Pepper and salt

  • (Optional) Cayenne pepper.

  • Dried oregano

  • 1 cooking bag Bulgur.


Set a pot of water to boil.

Chop onion and garlic.

Cook the Bulgur until it is cooked and then drain the package.

Cut all other ingredients fine or in small cubes.

Heat olive oil in a pan.

Fry onions and garlic.

Add zucchini, mushrooms and tomato.

Fry and shake it up.

Then add the spinach.

When all this is done, add half of the cooking bag of bulgur.

Finally, add the cucumber and stir well again.

Season with salt, pepper, cayenne and oregano.

Spoon this onto a plate.

Garnish with fresh basil and spring onion.

Enjoy your meal!
